I've been told they are wild chicory - we have them up here where I live.. Just took a pic today of them.. soon they'll be gone till next year.

If you look around a bit, you can find (or order from there) coffee that is blended with chicory... back in New Orleans in the Civil War when blockades were happening they drank chicory coffee and still to this day you can buy the blends (regular coffee + chicory) at supermarkets over a good bit of the south.

Other than that, I don't know.

My daughter was asking me the other day if we could dig some up for the roots and dry them out and try something like that ourselves.
